The aroma of Yunnan coffee has been known for hundreds of years, and it all started from the romantic lands of France when a French priest brought a coffee sprout into what is now Zhu Ku La village, Binchuan District, Dali City, Yunnan. This small sprout rooted itself deep into the Chinese culture, and this century old coffee tree still stands tucked away in the mysterious and peaceful village.
The amount of preparation is huge in order to make the best pizza and ingredients. Each ball of dough goes through a 5 stage process that ensure you get that distinct taste and texture we are so proud of. From mixing, proofing, kneading, dividing to rounding, they all have a regimand that is measured and calculated at each stage and done on a daily basis.
It takes 24 hours to make our secret dough recipe and we use it only after the time it needs to properly proof. Not before!
When preparing foods keep it clean, a dirty area should not be seen. Our kitchen is always open for inspection and always follow strict standard operating procedures.
